New Recipe 20: Baked Penne With Roasted Vegetables

Last night, the hubs and I had another new recipe.  We fixed Baked Penne with Roasted Vegetables, a la Giada/Food Network.  When I found the recipe online, I was somehow enough dumb enough to actually watch the video about the dish.  I have no clue what caused me to do this... Something about Giada drives me nuts, while I love her recipes!  


The hubs and I agreed that this recipe was a hit.  How can you go wrong with pasta, veggies, and cheese??!!


Changes from the Reynolds family:
  • Whole wheat penne (speaking of penne... I am the only one that goes crazy when she say "pin-ne"?)
  • Full 8 ounces of sliced mushrooms
  • "Fontiago" cheese instead of fontina
  • "Regular" 2% milk mozzarella instead of smoked mozzarella (I obviously didn't read the recipe close enough)
  • More pepper and less salt
  • Less olive oil
  • No Parmesan cheese (whoops!)
  • No butter (didn't need it)  
Here's how ours turned out.... (Giada's may have looked prettier, but she has food stylists and I don't!)

  1. Looks yummy! I made something similiar with pasta shells and chicken sausage with garlic this past weekend!
